Calabretta

"For four generations we have been choosing to cultivate our vineyards following the centuries-old tradition of Etna, using very limited sulphur and copper sulfate, practicing "sovescio", mulching if necessary, ploughing to air the soil, narrow manual pruning, hand harvesting. The plants are sapling or low espalier with plants anyway sapling and the vineyards are located on terraces with terraces with terraces supported by dry stone walls.
The lava ground, the strong thermal excursion between day and night and the high daytime solar radiation make unique the grapes harvested, perfectly ripe, towards the middle of October.
Our wines, therefore, smell and taste revive the scents and flavors of this wonderful part of Sicily. 
The cultivation of the vine is flanked by that of the olive tree and scattered fruit plants.
