The Dettori winery is located in Sennori, in the province of Sassari, in that small triangle of land called Romangia, the geographical area of ​​Logudoro - a golden place in Sardinian - as it is considered the most fertile, rich and lively part of Sardinia and has always been considered the cradle of Cannonau. In this company, everything is done in the family, from the vineyard to the cellar, which is built entirely underground. The Vermentino, Cannonau, Monica, Pascale and Moscato grapes come from the magnificent Cru of Badde Nigolosu, a sort of amphitheater, about 250 meters above sea level, surrounded by green hills. The soil is mainly calcareous and rich in sandstone: the combination of these two minerals gives it the typical creamy white color. The selection of the grapes is manual, the grapes are de-stemmed but not pressed, left to macerate in concrete vats without adding any sulfur. The must continues its journey in small concrete tanks until it is bottled, usually after two - three years, carried out with the help of all relatives. The winery is certified biodynamic, the company philosophy that wants nature to complete its cycle without any intervention of external agents: everything happens in the most spontaneous and genuine way possible. No mild, enzymes or any other adjuvant for winemaking are added. Not filtered, not clarified, not barricaded: the wines produced are Cru and are processed in purity: Dettori Bianco-Vermentino; the Tuderi, the Tenores and the Dettori - Cannonau; the Chimbanta- Monica; the Ottomarzo -Pascale; Moscadeddu - Moscato. Each bottle can be different from each other and it is good to let it express with its timing.
