The name Gewürztraminer derives from the German name of Termeno, the municipality bordering Caldaro in which the vine has been documented since the 14th century. It is not known with certainty whether the grape vine actually originates from Termeno, but the fact is that in South Tyrol it boasts a very long tradition and gives rise to excellent wines. Late harvest of particularly ripe and perfectly healthy grapes, de-stemming, cold maceration ( 10 ° C) for 12 hours, soft pressing, natural decantation, fermentation at a controlled temperature of 18-20 ° C, maturation on the fine lees in steel tanks for 3 months. It is suitable for shellfish and paté, it is also excellent as an aperitif.
